– 2 Chicken Breasts
– Olive Oil
– 2 slices Low Fat Mozzarella Cheese
– Diced Tomatoes (Use canned for quick preparation)
– Crushed Basil Leaves
Start by pouring olive oil into the bottom of a frying pan. Use just enough to cover the surface and turn on medium heat. While oil is heating up (approximately 1 minute) sprinkle salt and pepper onto one side of the chicken breasts. Place seasoned side down in the frying pan. Leave uncooked and cook until golden brown (approximately 2-3 minutes). Sprinkle uncooked side with salt and pepper. Flip chicken breasts so uncooked side is now facing down.
Turn the heat down to low. Sprinkle the desired amount of crushed basil onto chicken breasts. (You can use fresh basil leaves if you like, but whenever I buy fresh herbs and they always go bad before I use them all up. After chicken is fully cooked, place a slice of low-fat mozzarella cheese onto of each piece. Place the desired amount of diced tomatoes onto of cheese. Cover the chicken until cheese is melted and tomatoes are warm (approximately 1 minute).
